Welcome to our new series on seasonal fruits and vegetables! When I first started cooking I didn’t understand what was even meant by “seasonal” when it came to food. It wasn’t until I started gardening and shopping at our local farmers markets that it hit home. . . .

Perfect Eye of Round Roast Beef
When I think of roast beef I like to got with prime rib, strip loin, tenderloin, etc but lately the eye of round seems to be the cut of beef that is always on sale. The eye of round is a very lean, with little fat, which means that it can easily get dry and tough if cooked wrong. I would immediately think about throwing it in the slow cooker and cooking it on low all day for some tender pulled beef but it also makes for a great roast beef! . . .

Copycat Zupa’s Yucatan Tortilla Soup
There really isn’t a soup at Zupa’s that I don’t love, but one of my favorites is their Yucatan Tortilla Soup. There isn’t anything fancy about it, but I love the spanish flavor, the little bit of spice, the chunky pieces of grilled chicken and the fact it’s nice and light. I was looking for a healthy soup recipe to serve to some friends and family and I decided to recreate this Yucatan Tortilla Soup. . . .

Meal Plan for January Week 3
This week’s meal plan is all about simple dishes that require little thought and can be easily adapted. Life is busy, food doesn’t need to be complicated to taste delicious and feed your family. My children are polar opposites in tastes and personalities, which is why I try my best find recipes I can either deconstruct to meet their palates or easily add on extra sides so that there’s something on the table that appeals to everyone. . . .
